Pinned and Rated - The Pioneer Woman's Sour Cream Pancakes

The other day, for my birthday, my Managers took me out to the Pop Diner in Dallas for breakfast.  I had their Sour Cream Pancakes.  They were absolutely delicious.  Pancakes are not my favorite thing to eat, but I would definitely order them there again.

So, tonight when thinking about what to make for dinner, I decided to try sour cream pancakes.  When I Googled them, the recipe from Pioneer Woman came up first.

Mine actually looked exactly like hers, which is good!  I thought they were quite good.  The Cowboy didn't think they were anything special.  They were light, tasty and super easy to make.  I would probably rate them a 7 or 8 on a scale of 10.  The Cowboy would probably rate as a 5, so I will go with a rating of 7.  Final answer.

 There was another interesting looking recipe that differed quite a bit from The Pioneer Woman's.

Pinned and Rated! Rachel Ray's Chili con Queso Pasta Bake

Well, it's a new month with a new potluck!  Rachel Ray's recipes are very popular, but I have never actually made one of them.  The picture on this pin made my mouth water.



It was super easy and quick to make, and it's a good recipe with ingredients that are often on hand (in my household, at least).  I would rate it about a 7-8.  It is a little spicy, probably because I did not remove the jalepeno seeds.

Note:  If you don't want your hands (and later your eyes when you remove your contacts, despite multiple washings) to burn all night; it's a good idea to wear gloves when handling hot peppers.  Just sayin'.....

For your viewing convenience, here is the recipe:


Ingredients

1pound penne rigate (ridged penne)
pounds ground beef
1tablespoon ground cumin (1 palmful)
1tablespoon roasted ground coriander (1 palmful)
2tablespoons chili powder (2 palmfuls)
Coarse black pepper
1large yellow onion, chopped
3-5garlic cloves, chopped (we really like garlic so I put in more, the recipe calls for 3)
1jalepeño
2tablespoons butter
2tablespoons all-purpose flour (2 palmfuls)
2cups milk
¾pound cheddar cheese (about 2½ cups)
¼cup fresh cilantro leaves (a generous handful), chopped
½cup fresh flat-leaf parsley leaves (a few handfuls) chopped
114-ounce can diced fire-roasted tomatoes

Directions

Preheat the broiler to high and position the rack 8 inches from the heat.
Bring a large pot of water to a boil. Salt the boiling water and cook the pasta until slightly undercooked—a little chewy at the center.
While the water is coming to a boil, preheat a large skillet over medium-high heat and brown the hamburger. When the hamburger is almost finished, but still a little pink, throw in the garlic, jalepeño, and onions and finish cooking until the burger is browned and the onion is translucent. Drain the grease from the skillet and mix in the cumin, coriander and chili powder. Take off the heat or turn heat down low.
In a medium sauce pot (and you can do this while you’re browning the hamburger), melt the butter and add the flour to it. Cook for 1 to 2 minutes over moderate heat and then whisk in the milk. When the milk comes to a bubble, stir in the cheese, cilantro and parsley with a wooden spoon. When the cheese has melted, stir in the tomatoes.
Once the pasta is cooked, drain it and add it back into the large pot. Add the contents of the hamburger and all of the Cheddar sauce, and stir to combine. Transfer to a baking dish, sprinkle with a bit more cheese if you wish, and place under the broiler to lightly brown.

Pinned and Rated! Pioneer Woman's Chicken Spaghetti


I am addicted to Pinterest.  I currently have 28 boards, 2,763 pins, and 352 followers!

I spend way more time on Pinterest than I should and it interferes with the time I should be using to create, write, cook at home meals and all sorts of other things I could and should be doing instead of looking at millions of pictures online and pinning them on boards that rarely get reviewed by me.  I just pin…and pin..and pin!

So, I have made a commitment that if I am going to continue spending time on Pinterest, I will have to start actually trying out some of the recipes, making some of the crafts, and working on my DIY projects!

Today, I made a start!  We had a potluck to attend at church and I decided to try a casserole recipe that I had pinned.

I have been wanting to find a good Chicken Spaghetti recipe.  I’ve actually pinned several that meet that criteria and plan on making each one and rating them.  I started with The Pioneer Woman’s Chicken Spaghetti recipe since her recipes are popular – and let’s face it, they are fun to read.  Besides, her Cowboy’s butt is almost as cute as my Cowboy’s butt J

I didn’t take pictures of the process, since I couldn’t begin to compare with hers.  It was a big hit at the potluck and on a scale of 1-10, I am rating it an 8.  This is subject to increase or decrease as I try out some of the other recipes I have pinned.

It was rich, creamy and super easy to make.  I made it last night and popped it in the oven this morning.  It can be frozen, according to the recipe.

The only reason I rated it an 8 is because it’s the first one I tried.  I reserve the right to change my mind and bump it up higher.
